Summer is in full blast here in South Africa and with most people having “eating healthy” as part of their New Year’s Resolutions, here’s an easy-to-make, healthy tuna snack to impress your guests. It’s always been one of my mom’s favourite things to make.

You need:

2 tins of tuna (1 tin 170g)
1/2 finely chopped green pepper
1 grated medium onion
3 teaspoons gelatine (dissolved in about 50mls boiling water)
3/4 cup Mayonnaise (use low-fat to keep it healthy)
1/4 cup milk
Squeeze of lemon juice

Fish-shaped mould (or any mould you have available)
Serving Tray
Spray and Cook

Method:

Spray your mould with spray and cook to make it easier to remove your tuna shape later. Mix the mayonnaise, milk and lemon juice together. Mix the mayonnaise mixture and all other ingredients together in a bowel then place into your mould. Keep in the fridge for 4 hours to set. Carefully turn the tuna out of the mould onto a suitable serving tray. Serve with savoury biscuits.
