A very yummy way to eat your vegetables! And we can always do with more vegetables. This is probably not thee most healthiest way to get your veggies in…but it is definitely one of the tastiest. 🙂
You will need:
Vegetables of your choice (This time we used mushrooms, green pepper, baby carrots, baby marrows, patty pans and sun dried tomatoes)
1 sachet white onion soup
250ml cream (fresh or long-life)
Grated cheddar cheese (about 2 cups full)
Chop veggies and add them all together in microwave dish. (Or directly in oven tray if your oven tray fits in the microwave)
Mix onion soup powder, cream and a handful of grated cheese in mixing bowel
Pour contents of mixing bowel over veggies and mix together.
Put veggie mixture in microwave on high for about 15 minutes
Transfer veggies and cream to oven dish (if you are using different dishes)
Add extra grated cheese on top of veggies.
Cover with foil.
Bake in oven at 180 degrees Celsius for 30 minutes
