Healthy Butternut Soup

This is my favourite soup to make in winter. It contains vegetables which are healthy and garlic, ginger and curry powder to keep germs (and maybe some people) away…

This recipe makes about 10 servings:

1.4kg butternut, peeled and cubed
1 litre chicken stock
500mls orange juice
1 medium carrot, chopped
1 small potato, chopped
Half a onion, chopped
1 tsp garlic, crushed
1/2 tsp ginger, crushed
1 tsp Raj curry powder (or less depending on how hot you like it)
1/4 ground cumin
Salt and pepper to taste
20mls Olive Oil
Optional: Feta and brown bread to serve

Heat the oil in a large pot, add onion and fry for about 3 minutes. Add the garlic and ginger. Add the butternut, carrot, potato and spices and fry for about 1 minute. Add chicken stock and 250mls orange juice and allow to simmer until veggies are soft. Puree veggies for a smooth consistency and add back into pot. Add remaining orange juice. Stir on low heat for about 5 minutes. Serve with bread and feta. This soup also freezes well.
