Lionel’s Cream Curry

This is one of the first meals Marc made for me. It’s his dad’s recipe! I must say I was quite impressed! Since then Cream Curry Tortillas is one of our favourite meals.

Ingredients:
750g fillet steak- sliced into thin strips (against the grain)
Cashew nuts (salted) about 80g
1 green pepper- sliced
1 yellow pepper- sliced
1 red pepper-sliced
1 large onion- chopped
1 cube beef stock dissolved in water
Curry Powder- about 2 tablespoons (or according to how hot you like it)
Tumeric – 1 table spoon
Masala -1 tablespoon
6 bay leaves
2 garlic cloves- chopped
250ml cream
50mls olive oil

Heat oil. Fry onion with cashew nuts, bay leaves and dry spices (not garlic) for about 5mins, then add meat and brown meat. Add stock and garlic. Then add peppers, reduce water until peppers are soft. Add cream and allow to simmer for 10-15mins.
Serve with rice or tortillas. You can also use chicken instead of fillet for variation.
