Pot, Olive oil, 1 Onion, 3 chopped tomatoes, 2 cans chopped tomatoes, 3 cans chickpeas
garlic, ginger, pepper, coriander, cumin, turmeric, Raj curry powder, lemon juice
Heat oil in Pot. Add onion, garlic, ginger and pepper and sauté over medium heat until browned, about 5 minutes.
Turn heat down to medium-low and add the cans of tomatoes, chopped tomatoes, coriander, cumin, cayenne, turmeric and curry powder(1 teaspoon). Cook mixture with spices for about 5 minutes.
Add chickpeas, Allow to simmer for about 45 minutes, stirring occasionally.Add 1 teaspoon lemon juice and mix.
Serve with Naan bread or rice. For a healthy alternative I like to serve it with brown rice.
To make this extra tastey serve with chopped banana in greek yoghurt.(Marc calls this “banatziki”)
