Carol’s Carrot Cake

This cake is absolutely delicious! And carrots are good for you. 😉

What you will need:

For the Cake:
1 and 1/4 cups sunflower oil
2 cups sugar
2 cups cake flour
2 teaspoons baking powder
2 teaspoons cinnamon powder
1 teaspoon salt
4 eggs
3 cups grated raw carrots

For the Icing:
110g margarine
1 and a half cups of icing sugar
100g plain cream cheese
5mls vanilla essence

Baking tin
(2 small baking tins or 1 large one)

Method:

Cake:
Mix oil, sugar and eggs together in a mixing bowl. Add dry ingredients (flour, baking powder, cinnamon and salt) and carrots to the mixture. Pour mixture into well greased/sprayed baking tin. Bake for about 40 minutes at 180 degrees Celsius.

Icing:
Cream butter and icing sugar together. Add cream cheese and vanilla essence. Wait for cake to cool, then ice the cake.

Now watch the cake being devoured by your guests…
Warning: Do invite guests over when you make this cake. Otherwise you are at high risk of devouring the entire cake by yourself!
