Taco Tuesdays – DIY taco shells
Why shouldn’t you trust tacos?
They always spill the beans! 😝
Every random Tuesday (or Wednesday), it’s Taco Tuesday at our house! We got this recipe from Robert while standing in the queue at Shoprite, this is the version that works for us.
TACO SHELL RECIPE
INGREDIENTS:
3 eggs, beaten
1 ½ cups milk
1 cup yellow mielie meal
½ cup all-purpose flour
1 teaspoon salt
2 tablespoons oil
DIRECTIONS:
Combine all ingredients in a bowl using a wire whisk.
Heat a small frying pan. (Use medium setting on stove. Or select the boil setting on the induction cooker and set it to 1000 power.)
Lightly oil the pan with a bit of butter between cooking each taco. Spray and Cook also works and is less messy. Also, stir the mixture between tacos.
Using a ¼ sized measuring cup, pour the batter onto the pan and swirl the pan to spread it evenly.
When the top of the batter is dry, flip with a spatula to cook the other side.
Serve as is for soft tacos or follow the next steps for hard shell tacos.
Hang the soft tacos on the drying rack in the oven for 15 minutes @ 200 C in preheated oven. Or airfry them for 10 mins at 200 degrees Celsius.
Enjoy with a delicious taco filling and serve with your favorite tequila or Mexican beer.
