Spicy Cinnamon Nuts

Spicy Cinnamon Nuts – this smells and tastes like Christmas!
This recipe is adapted from Marisa de Bruyn’s recipe in the Seasons Cookbook. I love these food ideas and recipes. She even tells you when to plant certain veggies!

I have made these nuts a few times since Marisa’s demonstration. It’s easy and delicious!

Ingredients:

2 egg whites
1kg raw nuts (I like cashews)

1 cup Brown Sugar
2 teaspoons Salt

Remember you can adjust your spices but this is what I like:
3 tablespoons Cinnamon
1 teaspoon ground Ginger
1 teaspoon Smoked Paprika
½ teaspoon ground Cumin
⅛ teaspoon ground Nutmeg

Method:

Whisk egg whites. (I use an electric mixer and works well).

In a separate bowel mix sugar, salt and your spices (you can vary the spices as you wish and for your taste preferences).

Add whisked egg whites and nuts together and mix so that all the nuts are coated.

Add sugar and spice mixture and mix well until all nuts are well-coated.

Spread the nuts in a single layer on a baking tray.

Bake at 180°C for 10 minutes, mix the nuts and then bake for another 10 minutes.

Mix your sugar, spice and all things nice.
Coat nuts with egg whites and spice mixture.
Bake in oven.
