Cheese and Bacon Potato Soup
If you’re looking for comfort food on a cold day, this is it!
What do you call a husband who is good at making soup?
Souper-man!
We make this soup once or twice every winter and we always struggle to find the recipe so I decided to put it on here for easy access and for others to enjoy! I got Chat GPT to translate thr original recipe into english!
Ingredients:
– 6 large potatoes or 8 medium potatoes, peeled and chopped
– 1 packet white onion soup powder
– 250 ml fresh cream
– 500 ml grated cheddar cheese (2 cups)
– 1 tablespoon fresh parsley (chopped) or dried parsley
– 250 g bacon
– Salt and pepper to taste
– 1/2 teaspoon paprika
Method
1. Cook the Potatoes:
– Cover the potatoes with water, add salt, and cook until tender.
2. Prepare the Bacon:
– Cut the bacon into small pieces and fry until crispy. Ensure it doesn’t dry out while frying. Marcus adds tablespoon of honey to caramelize the bacon. Set the bacon aside.
3. Process the Potatoes:
– Once the potatoes are tender, mash them in a food processor. Keep the cooking water aside.
4. Mix Soup Powder:
– Mix the soup powder with one cup of boiling water.
5. Combine Ingredients:
– Return the mashed potatoes to the cooking water and add the mixed soup. Stir thoroughly.
– Add only one cup of cheese to the mixture, keeping the rest of the cheese aside.
– Add the remaining ingredients, including the bacon. Add more water if necessary, but be cautious as the soup should be thick.
6. Season and Simmer:
– Season with salt and pepper.
– Stir over low heat for ten minutes.
7. Serve:
– Place the remaining grated cheese at the bottom of the soup bowls and ladle the soup on top.
– Serve with bread, a bread roll, or vetkoek (fried dough bread).
