Emoji Cake ๐ (moist chocolate cake with cream cheese icing in the shape of an emoji)
This moist chocolate cake with cream cheese icing is sooo delicious!
It was Leo’s idea to bake a “kissy face” cake for his great-grandmother’s birthday… It’s nice and easy and there are many face emojis to choose from! ๐๐ ๐๐๐
Ingredients for the Cake:
1 3/4 cups flour
1 1/2 cups brown sugar
2 eggs
3/4 cup cocoa powder
1 and a 1/2 teaspoons baking powder
1 teaspoon salt
1 cup buttermilk
1/2 cup melted butter
1 teaspoon vanilla extract
1 cup hot water
2 teaspoons coffee
Cake Instructions:
- Preheat oven to 180 degrees Celsius.ย
- Grease/”spray and cook” a cake tin
- Mix 2 teaspoons instant coffee in 1 cup of boiling water and allow to cool.ย
- In a large bowl mix together: Flour, sugar, cocoa, baking powder and salt.ย
- In a smaller bowl mix together: Eggs, buttermilk, vanilla extractย
- Pour smaller bowl (eggs, buttermilk and vanilla extract) into larger bowl with dry ingredients.
- Pour melted butter in and mix.
- Pour water with coffee in and mix.
- Pour cake mixture into greased cake tin.
- Bake for about 45mins.
- Allow to cool before icing. (Or make the cake the day before.)
Icing:
With an electric mixer, mix together:
3 tubs plain cream cheese (each tub 250g)
1 and 1/2 cups Icing sugar
5mls Vanilla essence
5mls Yellow food colouring
To draw the face of the cake I used a squeezy bottle with Chocolate sauce for ice-cream.
